Desserts I Love

1) Tiramisu

Coffee. Chocolate. Cookie. Oh my guh.

2) German Chocolate Cake

I love nutty flavors and i love the chewiness. My mom introduced me to it and i fell in love before i could even pronounce it!

Mmm. My grandma made it best & i learned from her!

6) Store bought cherry pie

Why? My grandpa would bring it home almost weekly and he didnt like us eating sweets so it was really a treat! Theres nothing like the store-bought, jellied consistency. I make fabulous pies, but its too fresh. Store bought cherry pie just hits home.

India Kabab

India Kabab is a Middle Eastern, indian restaurant that, in my opinion, rocks! The food is so good and the price for a lunch buffet is only $7.95.

Few tips: Call ahead and see whats on the menu. I cant say this enough.

I went there for the first time and I was so not a fan of what they had. I piled my plate high, Im pretty flexible when I eat, tried one bite of everything and some stuff , I couldnt even swallow. Then I vowed I would never return and that indian food was just not for me.

Five years later, yes, its been around for decades!, I went with my dance troupe, and was surprised. When we got there, I kinda poked around at the buffet until my friend told me what to get. I got the measliest portions because Im not into wasting food. I sat down, tried everything and… it was like I was a starving child. I gobbled that food up went up for seconds and thirds!

My favorite was the Pakora or Bhajya, its a deep fried vegetable fritter and the Naan, which is a type of flatbread. There was also this dish with cauliflower and potatoes, called Aloo Gohbi, served with rice, it is amazing. The only con I can think of is that there is like nobody in there, ever. I think people go there for takeout, but whenever Ive gone its either my party only or one other party. But never has it been packed. The staff is very welcoming and all smiles, which I love. And, its damn good food.

One of the things that come to my mind when I think about kid-friendly desserts. I mean, bananas, chocolate, strawberries, whipped cream, nuts, cherries…. Heaven.

So, why not put together a cake?!

The baking process was….well….at first a disaster! And I know that is definitely not how I should start out my baking blog, but it was! I mean the strawberry cake was just a flop! I tried this new recipe (big mistake) and it was horrible. Note to self. When a cake calls for jello mix, never, ever, and I mean never am I going to try it, and navigate elsewhere…quickly!

It sounded good, I was trying something new, never put jello mix in a cake. And I will never try to again! Ugh, sloppy mess. But, I redeemed myself and made a homemade strawberry cake that was moist and strawberry-ee, and delish. Will be a keeper. And then I made a chocolate cake with chocolate chips, but I think next time I will skip the chocolate chips. I like chocolate, but I’m not the chocoholic kinda lad. So made my two cakes. Then went on to making my banana filling. Yumm. And my whipped cream frosting because plain whipped cream doesn’t hold up nor can you spread it and keep it looking pretty.

Hundred percent homemade. As is with all my baking. And just to inform, if I ever make something that is semi-homemade like rice crispy treats or canned frosting I spruced up, I will tell on myself so quick! I am ashamed when I do stuff like that, but, I’m not going to lie when I do. Why bother?

So. I layered like this. From Bottom to Top:

Chocolate cake–banana filling–strawberry cake–whipped cream frosting–covered the sides in nuts–topped with sliced strawberries and bananas–and maraschino cherries.

It was a tall round cake. Heavy to carry. Very warming to the soul when eaten. And a happy throwback from childhood. This my friends is what baking is about.

Cleansing Infused Water

On this rainy day, it is also the start to my health cleanse. My son is almost 2 and I still have not shook the baby weight *sigh*. I’m actually trying to get down *at least* to the weight after I had him. Yes, you read that right. So, gotta get into shape! It seems that every single stinkin’ time I start a diet/exercise regimen I get sick! Three weeks ago I started working out, watching more of what I ate, etc. And…..bronchitis. Don’t freak though, its basically a yearly thing in this dry desert for me, but still! I cant workout when I can barely breathe and I get the pity party goin’ on and I just indulge. So I’m all better and there’s nothing stopping me, so take two baby!

Now, this water is something that is oh-so, so-good. When I first read about it I was like who the hell drinks that?! But its an infused water than actually cleanses the natural body system free of toxins, stored fats, and re-hydrates, all without sugar, calories, or $1/bottle. I seriously made 2 liters of this stuff for $1.25

Count me in & bottoms up!

Cleansing Infused Water

 2 small lemons sliced thinly and in half

1 cucumber slightly peeled, and sliced

1 crushed mint sieve

Water

Now, I made my own mint sieve, and it wasn’t hard at all. I got a tea bag, opened it up, discarded the contents, shook my crushed mint jar in it until it was about the same amount as the tea that was in there. sealed it up with tape, and viola. A crushed mint sieve.

Add all ingredients to a pitcher, fill with desired amount of water, and refrigerate overnight.

The next morning, give it a whirl, pour, and feel it working.

I was happily surprised when it was pretty tasty. Id love for you guys to try it and let me know what you think!

Note-this does not help with digestive matters, but does make you pee out all your toxins. Maker beware.

LOW FAT Santa Fe Black Beans and Corn Recipe

I was browsing through low fat, low cal recipes, and as a vegetarian you’d think that would be easy. Well 7 years later, I had to switch stuff up! I was getting tired of the same things I always have and wanted new, yummy food, that was also guilt free. I found this recipe and tweaked it a little, I whip this up in about 30 min, and it is friggtiy-freakin-fabu.  Quick, easy, delicious. This is a staple.

Santa Fe Black Beans and Corn Recipe

2 Cans low sodium black beans, drained, rinsed thoroughly

1 (12) oz bag frozen corn

1 Can Stewed tomatoes with mexican seasoning, with juice

3 Jalepenos, rinsed, deseeded, rinsed again, diced

1 medium white or yellow onion, chopped roughly

Juice of 1 Lime

Cilantro

Oil

Garlic Powder, Ground Cumin, Salt, Pepper

Warning! This is quite spicy.

Saute onions with some salt. Add jalapenos before the onions are translucent, and cook for 2-3 minutes.

Add corn and tomatoes. I like to mash my tomatoes with the empty can to chop them up a little. When it starts to simmer, since the corn is frozen it will take a bit of time, then add black beans, garlic powder, cumin, and pepper to taste, and simmer about 15 minutes stirring occasionally.

Serve warm and squeeze lime juice and add chopped cilantro to top.

The cilantro and lime at the end really kick it up a notch and compliment all the flavors!

This would be great as a burrito filling too, I would add some veggie-meat and maybe some rice. I also have fallen in love with fat free sour cream! Have to try it!

So, Im really excited about finally getting a blog, that works, because my baking is just beyond delicious, and I need to get some pictures out there! Maybe even inspire some!

Now if you’re here to get recipes, I have a recipe section, but they will not contain my baking matters. Completely. Off. Limits. *Sorry* See I’m trying to get my own bakery and these recipes are my babies!! The desserts I make, I will post, and they will have pictures and a story behind it; reguarding my review, comments I’ve heard, how/why I got the idea, and the baking experience. The actual recipes I post will contain drinks and food matters, and don’t worry, they will be FABU!
